1. What does "wood-pressed" mean, and why is it superior to refined oils?

Wood pressing (or 'Kachi Ghani') is an ancient, slow method where oilseeds are crushed using a heavy wooden press at a low RPM. This minimal friction generates very little heat, ensuring the oil retains all its natural antioxidants, vitamins, and a strong, pungent flavor—none of which survive the high heat and chemical process of refining.

2. What are heirloom seeds, and why do you use them for your mustard oil?

Heirloom seeds ('Desi Seeds') are non-hybrid, unmanipulated varieties of seeds. We use them because they offer superior purity and a higher concentration of traditional nutrients compared to modern hybrid varieties, ensuring the best possible quality and flavor in the oil, even if they yield less.

3. Why does your traditional mustard oil have such a strong, pungent aroma?

The intense pungency is a sign of purity and high quality. It comes from the naturally occurring compound allyl isothiocyanate in the black/brown mustard seeds, which is retained because the oil is unrefined and wood-pressed. This flavor is highly desirable for traditional pickling and robust Indian curries.

Absolutely not. Our oil is pressed from organically grown heirloom seeds and is guaranteed to be 100% chemical-free, pesticide-free, and contains zero added preservatives or harsh solvents like hexane, which are typically used in refined oils.

5. Is this wood-pressed oil suitable for high-heat cooking, such as deep-frying?

Yes. Traditional mustard oil has a moderately high natural smoke point (around 480°F or 250°C), making it stable and healthy for all types of high-heat cooking, including deep-frying, sautéing, and tempering (tadka).

6. What is the best way to store opened mustard oil?
